Chocolate Cake

Let’s get one thing straight.  Fruit is a snack.  Chocolate is dessert.  If I ever hear someone tell me that they aren’t eating chocolate cake because of some diet they are on, I might just stop them mid sentence and ask, “I’m sorry, but do you smell something weird?  I think it’s umm…BULLSH#%T!!!!”

That might be a little extreme, but I think it is incredibly important to learn how to make things in a way to enjoy what you eat and physically feel good too.  It totally sucks when you are trying to do good things for your body and feel resentful during the whole process!  When that happens you will NEVER stick with anything.  Let this be a positive experience.

CHOCOLATE CAKE

This recipe is adapted from zenbelly catering no joke dark chocolate cake .

1 cup almond flour
1/2 cup arrowroot flour
1/4 cup coconut flour
1 teaspoon baking soda
1/2 cup cocoa powder
3/4 cup pitted dates (if you want less sweet us a little less. if you want more sweet add a little more)
1/4 cup coconut oil (plus more for greasing pans)
3 tbsp of Great Lakes Gelatin and about a cup of water or unsweetened almond milk/coconut milk
2 teaspoons vanilla extract

  • Put the dry ingredients into the food processor.
  • In a separate bowl melt the coconut oil. Add the vanilla and gelatin and then pour into the food processor to join the dry ingredients.  Add in either the water or the nut milk of choice.
  • Make sure you added the dates.
  • Blend well.
  • The consistency should look like brownie batter.  You might need to scrape the sides with a spatula and mix blend again.
  • If it is coming out too pasty and gunky, you need to add more liquid.  Don’t be alarmed!!  Working with Gelatin can be a tricky thing, but once you get the consistency you need you will ALWAYS know what to look for.

I used  mini loaf pans for one of the batches and baked on 350 for 15 mins.  I also made round cake that I lined the bottom of the pan with parchment paper and baked for 25 mins at 350.

I let it cool in the freezer for about 10-15 mins.

Frosting:

  • Soak 1 cup cashews for about 1 hour…maybe 2.  Remember, the longer you soak them, the better.
  • 3/4 cup dates
  • 1.5 tsp of vanilla extract (or flavor of choice)
  • 2 tbsp of cacao
  • 1/2 cup unsweetened almond milk/coconut milk or  2 tbsp of organic creamed coconut with water

Add all of these ingredients to the food processor and blend until you have a nice chocolate frosting.
