Blueberry Ginger Marinade

I love marinades that are good for both proteins as well as veggies.  This flavor combo is light and brisk and great for grilling.


  • 1/3 cup olive oil
  • 1 small fresh squeezed lemon
  • 2/3 cup organic frozen blueberries
  • 1 tsp ground ginger
  • 1-2 tsp garlic powder (depending on how garlicky you want it)
  • 1/2 tsp fish sauce
  • 3 tbsp organic creamed coconut
  • 1/3 cup water (3/4 cup water if you are making a salad dressing)



Put everything into blender and blend your heart out.


Pour over 3.5 lbs of cutlets and let soak up in the fridge for a few hours.



Pour marinade over zucchini and summer squash and make foil packets for the grill.  Grill for about 20 mins.  Super amazing.
