1, 2, 3 SUSHI!

I love the sushi! Who doesn’t?!  Going out for sushi can be somewhat challenging for me at times however.  The reason is that the majority of the rolls that I like are made with white or brown rice.  That kills my stomach.  The second reason is that there seems to be soy hidden in almost everything!!!  Did you know that both that killer ginger dressing that comes on those tiny little salads as well as seaweed salad contain soy sauce? Such a heart breaker!

Since I was craving sushi, I decided to take matters into my own hands.


  • Leftover grilled chicken
  • Cucumber
  • Black rice that was cooked in my mango marinade.

(Black rice is the only rice that my stomach seems to tolerate.)


  • With a tomato or paring knife, cut the center of the cucumber out, seeds and all.
  • Fill with finely cut up grilled chicken and black rice.
  • You can use any ingredient you want…tuna salad, egg salad, avocado, etc.  get creative!
