On Saturday I got the greatest pep talk from my five year old niece.
We were out on the boat enjoying some family time before my brother and sister in law and their kids had to fly back to Florida early the next morning. My niece and I were having a very in depth conversation about the meaning of life, just as any five year old would, when she asked me if I would go swimming with her.
You have to understand that I don’t like being submerged in water that has seaweed, fish, goose poop, and thousands of people making pishy in it. I know I know… I am probably the only person that can ruin a good summer buzz with thoughts like these. Any other normal person would just hop off the back of the boat cannonball style and let the summer fun begin.
So how do you tell a 5 year old that you won’t swim in the pishy water? Your aunt is a big wuss? Your aunt washes her pj’s every night and won’t wear a sweatshirt more than once without washing it? Your aunt has issues? I already have enough issues…I don’t want to give this sweet child a complex.
So I just looked at her and said, “I am a little scared of the water.”
My adorable niece looked at me and said, “Aunt Hillary, when I get scared I just tell myself to be really, really, really brave. So you just need to think about being brave too.”
How on earth do you say no to that? YOU CAN’T!!! So this crazy lady made her way into the pishy water…I mean the lake and went swimming (doggy paddling …I can’t even swim).
Sometimes it takes a five year old to make you blow your worries out the window and be carefree for just a moment.
Now Saturday was hotter than H -E -DOUBLE HOCKEY STICKS! What better way to cool off with a cool, peaches and cream pie?!
Ingredients for the filling:
- 3/4 cup of Organic unsweetened creamed coconut
- 4-5 peeled and sliced fresh peaches
- 1 tsp of vanilla extract
- 1 cup water
- 6 tbsp of flax meal
- dash of cinnamon
- Put everything in the blender and blend until everything is finely blended. If you want things a little sweeter you can add 3-4 dates. I like it more tart and peachy.
- I subtracted the cacao powder.
- I subtracted the raisins and added about 4 dates instead.
- I added about 1/2 cup of hazelnuts.
Once the crust is cool, Pour filling into the Crust and bake for about 30 mins. Put in the Fridge and let cool completely before cutting.
