Watermelon GET IN MY BELLY Jello

It has been INSANELY humid lately and my husband and I have been devouring watermelon like they are going to take it off the shelves tomorrow!

I love snacks that will keep me hydrated, refreshed, and give me a bit of a protein boost when I need a little pick me up on a hot, humid day.  My jello obsession seems to be doing the trick this summer.

Here is another fun recipe to try.

Ingredients:

  • 2 cups watermelon
  • 1  nectarine
  • 1 cup frozen, organic mango (plus extra to put in bottom of pyrex pan)
  • 1 cup water
  • 1 tsp beet powder (I scoop mine in bulk at Plum Market)
  • 2.5 tsp of Great Lakes gelatin
  • 1 tsp fresh squeezed lemon
