It has been INSANELY humid lately and my husband and I have been devouring watermelon like they are going to take it off the shelves tomorrow!
I love snacks that will keep me hydrated, refreshed, and give me a bit of a protein boost when I need a little pick me up on a hot, humid day. My jello obsession seems to be doing the trick this summer.
Here is another fun recipe to try.
Ingredients:
- 2 cups watermelon
- 1 nectarine
- 1 cup frozen, organic mango (plus extra to put in bottom of pyrex pan)
- 1 cup water
- 1 tsp beet powder (I scoop mine in bulk at Plum Market)
- 2.5 tsp of Great Lakes gelatin
- 1 tsp fresh squeezed lemon
Directions:

Put ingredients in the blender and blend until everything is super pureed.

Heat liquid on stove top until right before it starts to bubble.

place additional frozen mango in bottom of pan. Or you can add other fruit of choice.

Pour Liquid over fruit and then place in the refrigerator and let completely congeal. Enjoy!
