Forbidden Rice Pudding


One of my favorite treats that is always so soothing is rice pudding.  I love the warm, cozy feeling that cinnamon and vanilla bring when they come together.  There is something about rice pudding that makes you slow down and enjoy the present moment.  Almost like a Folgers commercial =).

Now, many of you know that I don’t eat grains or legumes.  There was a period of time that I thought rice pudding was a thing of the past.

Welcome to this moment where Forbidden Rice Pudding is no longer forbidden.

This rice pudding uses forbidden rice or black rice which is easier for my body digest.   Out of all the varieties of rice, it has the highest protein content, fiber content, and the highest amount of anti- oxidants of any rice.

This recipe will leave you with warm fuzzies and a happy belly.






Make your rice ahead of time so it is ready to use when you are ready.  Add a little vanilla extract when it is steaming.


In a sauce pan, put your water, chunk of creamed coconut and dates.  Put on medium and stir until creamed coconut is melted down.  The dates are thrown in just to soften up.


Add your gelatin to a cup of nut milk and whisk.  Then add it to the sauce pan of coconut cream, water and dates.

Once everything is evenly whisked together remove from stove.

Add in your cinnamon, vanilla and optional Maca powder.


Pour contents into blender and blend well.


Add about 1.5-2 tablespoons of rice and fill the rest of the way with the liquid from the blender.  Mine made approx. 4 servings.  Let cool in the fridge before serving.

If it thickens up more than you like, microwave for a few seconds before serving to soften it a little bit.
