Jackfruit Chia Pudding

Chia pudding is always a great and easy snack to make.  It’s quick, versatile, and delicious.  What I love about it most is that you can make whatever flavor you like.  As long as you like the consistency of tapioca pudding, then chia pudding is going to a be a big hit.

Jackfruit  has been all the rage lately!  It can be eaten sweet or savory.  It’s loaded with anti-oxidants and phytonutrients.  Why wouldn’t you want to eat it?!  Because of its high carbohydrate content, it is the perfect post workout treat.

I decided to combine this hearty fruit with my love of chia pudding and what came out was pudding magic!

Ingredients:

  • 1/2 cup of cashew milk  or non dairy milk of choice
  • 2 bulbs of fresh or frozen jackfruit.  I used frozen.
  • 2 tbsp of chia seeds
  • a dash of cinnamon

 

Directions:

  • Blend everything except for the chia seeds.

 

  • In a small bowl, add in your chia seeds.  Pour your contents over the chia seeds and stir.  Cover with plastic wrap and put in the fridge for a few hours to let congeal.  Enjoy!
